KETO CHEESY BACON CHICKEN

INGREDIENTS

  • 5 chicken breasts
  • 2 tablespoons seasoning rub
  • ½ lbs. bacon
  • 3 oz. shredded cheddar
  • barbecue sauce

DIRECTIONS

  1. Preheat oven to 375 F and spray a baking sheet with cooking spray
  2. Rub both sides of chicken breast with seasoning rub and top with bacon, bake for 25 minutes
  3. Remove from oven, sprinkle with cheese and serve

KETO CHEESE MEATBALLS

Total Time: 20 Minutes

INGREDIENTS

  • ½ lbs. beef mince
  • 2 tablespoons parmesan cheese
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ lbs. cheese
  • 1 tsp garlic powder

Directions

  1. Cut the cheese into cubes
  2. Mix all dry ingredients with the ground beef
  3. Wrap the cubes of cheese in mince and pan fry the meatballs

KETO PARMESAN CASSEROLE

INGREDIENTS

  • 2 cups cooked chicken
  • ½ tsp basil
  • 1 slice bacon
  • ½ cup marinara sauce
  • ½ tsp red pepper flakes
  • ¾ cup mozzarella cheese
  • ½ cup Parmesan cheese

DIRECTIONS

  1. Preheat the oven to 325 F
  2. Lay out the chicken in the pan and spread the marinara sauce all over
  3. Dredge the top with parmesan, red pepper flakes, mozzarella and sprinkle bacon and basil
  4. Bake for 20-25 minutes, remove and serve

KETO LASAGNA

INGREDIENTS

  • 1 lb. ground beef
  • 1 cup sauce
  • ¾ cup mozzarella
  • 6 tablespoons ricotta
  • salt, onion powder, Italian seasoning

DIRECTIONS

  1. Preheat oven to 350 F, brown beef and season
  2. Begin to layer a deep dish with noodle, ricotta, sauce mix and sprinkle with mozzarella, top with cheese
  3. Bake for 20-25 minutes
  4. Remove and serve

BUFFALO KETO CHICKEN TENDERS

INGREDIENTS

  • 1 lb. chicken breast tenders
  • 1 cup almond flour
  • 1 egg
  • 1 tablespoon heavy whipping cream
  • 5 oz. buffalo sauce
  • salt

DIRECTIONS

  1. Preheat oven to 325 F
  2. Season the chicken breast tenders with salt, pepper and almond flour
  3. Beat 1 egg with 1 tablespoon heavy cream
  4. Dip each chicken tender in the egg and then into seasoned almond flour
  5. Place chicken tenders on a baking sheet and bake for 25 minutes or until crispy
  6. Remove and serve

Keto Mushroom Wild Rice Pilaf

Okay, okay, before you get angry and say that wild rice pilaf isn’t keto – we’re definitely not using wild rice in this recipe. We’re using shelled hemp heart seeds to mimic this taste and texture, and boy does it do a good job. I grabbed these hemp seeds when I first heard about them and immediately knew I was going to do a rice type of dish. I highly recommend grabbing a pack to try out yourself! The slightly crunchy, slightly al dente texture really gives off a vibe of a couscous or a wild rice. The flavor is very earthy and natural, exactly what you’d expect with a bowl of wild rice. Low Carb Sweet & Sour Chicken – Keto

Chinese food has been a weakness for me since I first tasted it. Fried rice, sweet and sour chicken, general tso’s, chow mein. Everything I can’t have on a ketogenic diet. If you’re missing the fried rice, don’t fret – you can make an accompanying Cauliflower Fried Rice! Through the years I have built up a resistance to Chinese food, eventually not getting cravings for it and not even thinking about it. The other day I was surfing the internet and saw a picture of some delicious looking sweet and sour chicken. All of those memories of Chinese food flooded back to my mind, making me crave anything that even resembled a piece of orange chicken. After that, I saught out to re-create one of my all time favorites: Sweet and Sour Chicken. But to make it low carb? Well that’s a challenge, isn’t it. The judgement? It was a winner! Family and friends enjoyed it and between 4 people, 5 1/2 pounds of chicken was eaten in 1 sitting.
